Soon I will be getting the flour and eggs out, making the pasta dough, kneading the heck out of it and rollin that dough through my hand crank pasta machine. Made in Italia, naturally :-)
Here's the machine and the cutting head, which will produce a spaghetti or fettucine cut.

Well, accolades to you Chris- I have all kinds of these machines sitting in the basement- the older I get the less inventive I feel. Maybe , I will haul them up to you on my next trip up. Sounds DEE-LISH-I-OUS!
